Some foods are acidifying when introduced to the body, and others are alkalizing. So what you consume on a daily basis will change the pH levels of your blood, saliva and urine. The pH scale goes from 0-14 (with acidic substances falling below 7 and basic substances falling above 7). Normal levels for body fluid pH hover right in the middle of that range. Foods can either raise or lower your pH level, and this is based on the mineral content of the food – not the actual pH of the food itself. Lemon juice, for example, has a low pH, but has an alkalizing effect on the body when consumed.

The theory behind an alkaline diet is that because our body’s pH level is slightly alkaline, with a normal range of 7.36 to 7.44, our diet should reflect this and also be slightly alkaline. An imbalanced diet high in acidic foods such as animal protein, sugar, caffeine, and processed foods tends to disrupt this balance. The alkaline diet can deplete the body of alkaline minerals such as sodium, potassium, magnesium, and calcium, making people prone to chronic and degenerative disease.

An imbalance of acidity/alkalinity creates a favorable condition for bacteria growth, yeast and other harmful organisms and it also weakens our immune system. All cells that make up the human body are slightly alkaline, and therefore they must maintain some alkalinity to function and remain healthy.
